THE GLOW UP POWER BOWL
INGREDIENTS: * TEA TREE PRODUCTS
1/4 cup (60 ml) GARLIC OLIVE OIL*
2 tablespoons GLAZED ONION BALSAMIC VINEGAR*
2 teaspoons LEMON PEPPER SPICE BLEND
1 cup (170 g) quinoa, rinsed
2 cups (480 ml) vegetable broth
1 cup (150 g) cherry tomatoes, halved
1 cup (150 g) cucumber, diced
1 cup (100 g) cooked chickpeas
1/4 cup (30 g) crumbled feta cheese
1 tablespoon fresh parsley, chopped
1 tablespoon chia seeds or flax seeds (optional for extra nutrition)
1/2 avocado, sliced
DIRECTIONS:
Cook the Quinoa:
In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15-20 minutes until all the liquid is absorbed and quinoa is tender. Remove from heat and fluff with a fork.
Prepare the Vegetables and Chickpeas:
In a large bowl, toss the halved cherry tomatoes, diced cucumber, and cooked chickpeas with GARLIC OLIVE OIL*, GLAZED ONION BALSAMIC VINEGAR*, and LEMON PEPPER SPICE BLEND. Stir until everything is well coated.
Assemble the Power Bowl:
Divide the cooked quinoa between 2 bowls. Top with the vegetable and chickpea mixture, crumbled feta cheese, sliced avocado, and a sprinkle of fresh parsley. For an added boost, sprinkle chia or flax seeds on top.
Serve and Enjoy:
Drizzle a little extra GARLIC OLIVE OIL and GLAZED ONION BALSAMIC VINEGAR over the top if you want a bit more flavor. Serve immediately and enjoy your delicious, nutrient-packed bowl!
