wacky pepper chicken skewers
INGREDIENTS: * TEA TREE PRODUCTS
the chicken-
1 lb chicken breast, cut into 1-inch cubes
2 tablespoons *ITALIAN HERBS OLIVE OIL
2 tablespoons *WACKY PEPPER spice blend
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
1 zucchini, cut into 1-inch rounds
2 cloves garlic, minced
1 lemon, juiced
Salt, to taste
Fresh parsley, chopped (for garnish)
DIRECTIONS:
Marinate the Chicken:
In a large bowl, combine the * italian herbs olive oil, *wacky pepper spice blend, minced garlic, and lemon juice. Mix well.
Add the chicken cubes to the bowl and toss to coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
Prepare the Vegetables:
In a separate bowl, combine the red and green bell peppers, red onion, and zucchini. Drizzle with a bit of olive oil and sprinkle with salt to taste. Toss to coat.
Assemble the Skewers:
Preheat your grill to medium-high heat.
Thread the marinated chicken, bell peppers, onion, and zucchini onto skewers, alternating between the chicken and vegetables.
Grill the Skewers:
Place the skewers on the preheated grill. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
Serve:
Remove the skewers from the grill and transfer them to a serving platter.
Garnish with fresh chopped parsley.
