Wacky Pepper Chicken Skewers

INGREDIENTS:

the chicken-

  • 1 lb chicken breast, cut into 1-inch cubes

  • 2 tablespoons ITALIAN HERBS INFUSED OLIVE OIL

  • 2 tablespoons WACKY PEPPER spice blend

  • 1 red bell pepper, cut into 1-inch pieces

  • 1 green bell pepper, cut into 1-inch pieces

  • 1 red onion, cut into 1-inch pieces

  • 1 zucchini, cut into 1-inch rounds

  • 2 cloves garlic, minced

  • 1 lemon, juiced

  • SALT, to taste

  • Fresh parsley, chopped (for garnish)

DIRECTIONS:

Marinate the Chicken:

  • In a large bowl, combine the ITALIAN HERBS OLIVE OIL, WACKY PEPPER, minced garlic, and lemon juice. Mix well.

  • Add the chicken cubes to the bowl and toss to coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Prepare the Vegetables:

  • In a separate bowl, combine the red and green bell peppers, red onion, and zucchini. Drizzle with a bit of ITALIAN HERBS INFUSED OLIVE OIL and sprinkle with SALT to taste. Toss to coat.

Assemble the Skewers:

  • Preheat your grill to medium-high heat.

  • Thread the marinated chicken, bell peppers, onion, and zucchini onto skewers, alternating between the chicken and vegetables.

Grill the Skewers:

  • Place the skewers on the preheated grill. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.

Serve:

  • Remove the skewers from the grill and transfer them to a serving platter.

    Garnish with fresh chopped parsley.
