Kickin’ Garlic Pork Fried Rice
INGREDIENTS:
PULLED PORK
1 lb pork tenderloin
1 cup chopped mirepoix
2 tbsp KICKIN’ GARLIC
1/2 cup water or chicken broth
FRIED RICE
1 tbsp GARLIC OLIVE OIL
1 cup frozen peas and carrots
1/2 cup frozen corn
2-3 small boxes leftover white rice
1 tbsp minced garlic
1/3 cup soy sauce
2 eggs
drizzle of sesame oil
drizzle of teriyaki sauce
DIRECTIONS:
Add all pulled pork ingredients to slow cooker, cook on low 8 hours.
Shred pork and set aside.
Sauté the veggies and rice until soft in GARLIC OLIVE OIL, about 5 minutes.
Add soy sauce and stir to combine.
Add in minced garlic and move rice to one side of the pan.
Crack in two fresh eggs and scramble on the empty side of the pan.
Mix with the rice and drizzle in sesame oil. Plate, and top pork with KICKIN’ GARLIC.
Drizzle with teriyaki for a sweet n tangy bite!
