Spicy Habanero-Lime Grilled Flatbread
INGREDIENTS:
3 Tbsp HABANERO OLIVE OIL, divided
1 Tbsp FAJITA SPICE
2 store-bought flatbreads or naan
8 oz block feta cheese
3 Tbsp LIME OLIVE OIL
1 Tbsp HONEY BALSAMIC VINEGAR
1/2 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
Fresh basil or cilantro, for topping
Flaky sea salt, to finish
DIRECTIONS:
Preheat grill or grill pan to medium-high. Brush flatbreads with 2 Tbsp HABANERO OLIVE OIL and dust with FAJITA SPICE.
Grill flatbreads 2 to 3 minutes per side until charred and crisp. Set aside.
In a food processor, blend feta and LIME OLIVE OIL until smooth and creamy, about 1 minute. (No processor? Mash with a fork — it'll be chunkier but still delicious.)
Spread whipped feta generously over each flatbread.
Top with cherry tomatoes and red onion. Drizzle with HONEY BALSAMIC VINEGAR and the remaining 1 Tbsp HABANERO OLIVE OIL.
Finish with fresh herbs and a pinch of flaky salt. Slice and serve immediately.
