Bacon-Fig Balsamic Pork Chops
PREP TIME: 10 min COOK TIME: 10-13 min SERVES: 4
INGREDIENTS:
4 boneless pork chops, 3/4 inch thick (about 2 lbs)
3 Tbsp BACON INFUSED OLIVE OIL
3 tsp HONEY, I SMOKED IT (1 tsp for the rub, 2 tsp for the glaze)
1 tsp salt
1/2 tsp COARSE BLACK PEPPER
1/4 cup FIG BALSAMIC VINEGAR
1 Tbsp butter
DIRECTIONS:
Rub pork chops all over with BACON INFUSED OLIVE OIL, HONEY, I SMOKED IT, salt, and COARSE BLACK PEPPER, pressing it in on both sides. Let sit 10 minutes at room temp while you heat the pan.
Heat a skillet over medium-high heat. Sear chops 4-5 minutes per side, until internal temp reaches 145°F. Remove and set aside.
Lower heat to medium. Add FIG BALSAMIC VINEGAR, remaining HONEY, I SMOKED IT, and butter to the skillet, scraping up browned bits. Simmer 2-3 minutes, until thickened and glossy.
Spoon glaze generously over pork chops and serve.
